西兰花种子酶解生成萝卜硫素的条件研究 被引量:13

摘要 萝卜硫素是蔬菜中发现的具有很强抗癌活力的一类异硫代氰酸盐.采用绿玉西兰花种子为原料,研究了脱脂、pH值、温度、时间、缓冲液质量分数(w)、Vc质量浓度(ρ)等,对西兰花种子酶解生成萝卜硫素的影响.通过实验得到酶解的较优条件是:用石油醚脱脂,在pH为5.0的Tris-HCl缓冲液中,温度为15℃,质量比m(种子)∶m(缓冲液)=1∶3.33,缓冲液的ρ(Vc)为0.07 kg/m3,酶解时间为16 h. Sulforaphane found in vegetables is an isothiocyanate and has strong anticancer effect.Broccoli seeds were used as materials,influences of degreasing,pH value,temperature,time,buffer liquor weight and Vc concentration on formation of sulforaphane were studied.Results show that the best enzymatic condition was that degreased with benzinum,hydrolyzed in Tris-HCl enzymatic hydrolyzing liquor of pH 5 with the temperature was 15℃,the weight ratio of broccoli seed and buffer liquor was 1∶3.33,the Vc concentration was 0.07 kg/m3,the hydrolyzing time was 16 h.
