食品供应链质量安全管理模式研究——三鹿奶粉事件案例分析

Research on the Quality Security Management Model of Food Supply Chain——Case Study of "Sanlu"

食品安全直接影响到人们的身体健康和生活质量,因此食品供应链应以保障安全为首要目标。本文基于供应链管理的基本思想,结合食品供应链的特点,探讨了如何建立有效的质量安全管理模式,提出了包含追溯性、透明性、检测性、时效性和信任性五个要素在内的质量安全管理模型框架。其中,追溯性和透明性是对供应链信息流建设的要求,检测性和时效性是对物流建设的要求,信任性则是供应链上下游企业合作关系的基础保障。最后,文章通过对"三鹿奶粉事件"案例的分析,说明了这五个要素在食品供应链安全管理中的重要作用。

Given the fact that food security bears directly on people＇s health and quality of life,food supply chain is intended primarily to ensure the safety of foods. Considering the character of food supply chain,the paper discusses how to establish an effective quality security management mode based on the principle of supply chain management and presents a food quality security management framework consisting of five elements：traceability,transparency,testability,timeliness and trustiness. Traceability and transparency are required of information flow construction and timeliness and trustiness are required of logistics construction. Cooperation between upstream and downstream enterprises along the food supply chain is based on trustiness. Finally,the case study of ＂Sanlu＂ is given to highlight the importance of the five elements in food supply chain safety management.
