摘要
菇娘作为一种北方特色水果,因其季节性限制、不易保藏等缺点阻碍了对其深加工利用。为解决这一难题,为菇娘的开发和利用提供新的有效途径,同时也填补市场上菇娘粉末饮料的空白。选择技术先进的压力喷雾干燥做为加工菇娘粉末饮料的主要方法,对其加工工艺进行了实验研究,解决了菇娘粉末饮料喷雾干燥加工工艺中的若干关键技术问题:口味的调节,助干剂的选择和用量的确定,喷雾干燥工艺参数的优化,感官鉴定和各种理化指标的测定等。对后续工业化生产菇娘粉末饮料提供一定的试验依据与技术支持。
As a feature fruit in the north China, the deep-processing and utilization of Physalis pubescens L. was hindered, The problem was solved in this paper, gap of Physalis pubescens L powder drink in the domestic market. And provided a new and effective way for the development and utilization of physalis pubescens L. At the same time, An advanced pressure spray-dry was choosen as a primary means of to prepare Physalis pubescens L powder beverage and its processing technology was studied in this topic. In this paper, some primary problems and key techniques were solved and discussed on processing of Physalis pubescens L., including the regulation of taste, the selection of the drying aid, the amount of drying aid, the optimization of the spray drying parameters, sensory evaluation of product and the determination of various physical and chemical indicators and so on. And offer foundation of examination and technical support for follow-up commercial process of Physalis pubescens L. powder drinks.
