摘要
为探讨脱脂乳乳酸菌发酵产物和碱性蛋白酶水解产物对小鼠脾淋巴细胞增殖的影响,采用凝胶过滤法将各发酵和水解产物进行分离纯化,测定不同处理方法和不同分子量范围的肽段对小鼠脾淋巴细胞增殖作用的差别。结果显示,经乳酸菌发酵或酶水解后的脱脂乳蛋白,尤其是分子量范围<3kDa的小肽具有较强的免疫调节活性。因此,发酵或水解用于开发低致敏乳源蛋白基料是可行的。
To investigate the effect of spleen lymphocyte proliferation( SLP) between the skimmed milk production of lactobacillus fermentation and enzymolysis in mice.Each product had been purified and separated by gel filtration method,and evaluated the effect of different treatment and different range of peptide on the SLP in mice.The results showed that the lactoprotein which fermented by lactobacillus and hydrolyzed by enzyme,especially the molecular weight of peptide 〈 3kDa had stronger immunomodulatory activity. This study confirmed that the method of fermentation and hydrolization could be used in exploiting the hypoallergenic protein ingredients from milk source.
