摘要 基于光谱分析的食品安全检测方法是利用食品中的危害物对光的吸收、散射、反射、透射及荧光等特性,并借助光谱仪进行分析的检测方法。基于光谱分析的食品安全检测方法在快速性、非破坏性、非侵入性等方面的优势,使得其在食品生产和加工过程的食品安全在线检测中具有重要应用前景。本文综述了食品安全检测中的光谱分析技术以及近几年在真菌毒素、果蔬表面危害物在线检测方面的应用情况,并指出在提高灵敏度、选择适合所检测危害物的光谱、建立校正模型和降低检测设备成本等方面仍需要深入研究。 The detection method of food safety based on spectroscopy uses the spectrum characteristics of the hazards in foods, such as absorption, reflection, transmission and fluorescence to detect the food safety. This method has obvious advantages in the aspect of rapid, non-destructive and non-invasive measurement, and is promising in the field of online detection for food production.The on-line detection method of food safety based on spectroscopy and its applications in the detection of mycotoxins, fruit and vegetable surface contaminants were reviewed.Deep study should be taken on aspects of the sensitivity improvement, appropriate spectrum selection, calibration models estabJishment and the cost reducing in the future.
