鸡卵清蛋白水解物中分离纯化出具有清除DPPH·自由基的多肽的研究

摘要
本文利用胰凝乳蛋白酶水解鸡卵清蛋白,得到鸡卵清蛋白水解物。通过包括凝胶过滤和反相高效液相法等连续柱层析法分离纯化得到一种具有较强DPPH·自由基清除能力的多肽。液质联用鉴定该物质的相对分子质量为730.4Da,结构为Cys-Pro-Asp-Gly-Asn-Ile-Leu,位于卵粘蛋白α亚单元的1742~1748,其DPPH·自由基清除率为27%(500μg/mL)。
