蚌埠市叶菜类蔬菜硝酸盐含量检测及安全风险评估 被引量:2

摘要 对蚌埠市叶菜类蔬菜硝酸盐的含量进行了检测和评价。于2010年4月采集了蚌埠市小蚌埠乡和吴小街乡2个蔬菜生产基地6个品种27份蔬菜样品及4个主要菜场的12个品种48份蔬菜样品,采用紫外分光光度法分析了其中硝酸盐的含量。研究结果表明:(1)2个乡镇叶菜类蔬菜硝酸盐含量有共性,小青菜硝酸盐含量超标,菠菜、葱、生菜全部符合标准,菠菜硝酸盐含量最低;(2)市售叶菜类蔬菜中硝酸盐污染程度较重的白菜和芹菜,葱、生菜、乌白菜、韭菜、包菜、苋菜、菠菜和茼蒿的硝酸盐含量都较低,均值都在3000mg/kg以下,符合国家蔬菜硝酸盐含量限值标准。其中韭菜、包菜、菠菜的硝酸盐含量普遍较低,均值都低于785mg/kg,达到适于盐渍与熟食的二级标准。 In this thesis,nitrate content of leaf vegetables in Bengbu were tested and evaluated.27 vegetable samples of 6 varieties collected in the two vegetable production bases located in Xiao Bengbu Township and Wu Xiaojie Township,and 48 samples of 12 varieties collected in 4 major vegetable markets in April 2010,were tested for their nitrate content by ultraviolet spectrophotometry.The results showed that:(1)there were similarities in nitrate content of leaf vegetables in the two townships,that was,nitrate content of pakchoi exceedeel the standards,while spinach,onion and lettuce met the standards,and spinach had the lowest nitrate content;(2)the most seriously nitrate-polluted market vegetables were cabbage and celery;Onion,lettuce,Ukrainian cabbage,leeks,cabbage,amaranth,spinach and crowndaisy chrysantemum had a low nitrate content under 3 000 mg/kg,which met the national nitrate concentration limit standards;among the mentioned vegetables,leeks,cabbages and spinach had an average content under 785 mg/kg,which was very low and attain Grade Ⅱ standards of suiting for pickling or cooking.
