摘要
采用蒸馏萃取法分别提取紫娟茶(紫娟鲜叶制的蒸青茶、晒青茶)和大叶茶(云抗10号鲜叶制的晒青茶、蒸青茶)的香气成分,GC-MS联用进行分析比较。结果表明,紫娟茶香气物质较大叶茶丰富,且成分差异较大,紫娟茶中分离出大叶茶未检出的化合物有21种,分别为隐品酮、β-甜橙醛、3-乙酰氧基环氧庚烷、乳酸叶醇酯、(E)-6,10-二甲基-5,9-十一烷二烯-2-酮、反-9-甲基-十氢萘-1,8-二酮、橙花叔醇、2,6,10-三甲基-1,5,9-十一烷三烯、2-甲基碘代十一烷、异植醇、6-硝基-环十六烷-1,3-二酮、柠檬烯、甘油、十五烷、十六烷、环戊基乙酸、蒽、邻苯二甲酸-十一烷二酯、Z,Z-4,15-十八炭二烯-1-醇、二十二烷、4-甲基-2-(2-甲基-丙烯基)-3,6-二氢吡喃。这21种化合物是否是形成紫娟茶特殊香气的原因还有待进一步研究。
The aroma components of Zijuan tea (Sun withering tea and evaporating green tea were made from the fresh leaves of Zijuan tea plants) and Daye tea ( Sun withering tea and evaporating green tea were made from the fresh leaves of Yunkang No. 10 tea plants) were stud- ied. They were extracted respectively by distilling extraction, compared and analyzed by GC-MS. The results showed that : the volume and aroma components of Zijuan were more than that in Daye tea,Zijuan tea had 21 components that had not be detected from Daye tea:Cryptone; beta. -Sinensal ;3-Acetoxy-1 -oxacyeloocrane; Cis-3 - hexenyl lactate ;5,9-Undecadien-2-one, 6,10-dimethyl-, (E) - ; cis-9-Methyl- decalin- 1,8 -dione ;Nerelidol; 1,5,9- Undecatriene, 2,6,10-trimethyl-, (z) -; 1 -Iodo-2-methylundecane ;2-Hexadecen-1 -ol, 3,7,11,15-tetrameth- yl-, [ R- [ R * , R * - ( E ) ] ] - ; 6 -Nitro-cylohexade cane -1,3-dione ; l-Limonene; 1,2,3-Propanetrlol ; pentadecane; Hexadecane ; Cyclopenta- neacetie acid, 3 -oxo-2- (2-pentenyl ) -, methyl ester, [ 1. alpha. ,2. alpha; Anthracene ; 1,2-Benzenedicarboxylie acid, diundecyl ester; Z, Z- 4,15-Octadeeadien-1 -ol ; Docosanoate; 2H-Pyran, 3,6-dihydro-4-methyl-2-( 2-methyl-1 -propenyl ) -. The relationship between 21 endemic components and special aroma in Zijuan tea would be needed to further study.
