摘要
三角梅(Bougainvillea Spectabilis Willd)为紫茉莉科(Nyctaginaceae)宝巾花属(Bougainvillea)藤状灌木,在我国分布比较广泛。随着社会的发展和人们生活水平的提高,人们的食品安全意识以及保健意识也在日益提高,因此开发利用动植物天然食用色素资源,日益受到人们的普遍重视。三角梅花色为紫红或玫瑰红,是开发天然食用色素的良好资源。本研究采用二次通用旋转试验设计,对三角梅红色素的提取工艺进行了优化,建立了色素提取率与提取温度、液料比、提取时间的二次回归数学模型,并利用该模型探讨了各因素对色素提取率的影响。结果表明:各因素对色素提取率作用大小依次为:提取时间>液料比>提取温度,三角梅红色素的最优提取工艺为:提取温度为40℃,液料比为15∶1,提取时间为20min。本研究为三角梅红色素的开发利用提供了理论依据。
The extraction technology of Bougainvillea Spectabilis Willd red pigment was optimized by quadratic general rotary design and a quadratic regression equation was established.Also,effects of the factors were investigated by the equation.Results showed the order of significance that affected extraction technology was extraction time,ratio of liquor to material and extraction temperature.The optimum extraction technology were:extraction temperature was 40℃,ratio of liquor to material was 15 ∶1,extraction time was 20min.The study provides the basic data for the utilization of the Bougainvillea Spectabilis Willd red pigment.
