Carotenoids are considered as important nutrients from food.Their distribution and occurring form in water-contained foods was paid attention.This article reviewed published results of carotenoids aggregation studies.It is expected that information provided in this article is able to be useful for food and nutrition scientists who are working on carotenoids from foods.
