摘要
土菜作为乡土气息浓郁、特色鲜明的民间菜之一,在湖南衡东和全国其它地区的餐饮市场上异军突起,深受广大消费者喜爱。本文不仅论述了土菜的特色及标准化在土菜产业发展中的意义和作用,而且阐述了制定土菜行业标准的要点及内容,指出应当对衡东土菜进行规范、制定相应的标准,以标准促特色,才能有助于衡东土菜的持续健康发展,做大做强衡东土菜产业。
Rural dishes,a school of folk cuisine with distinct features,are enjoying increasing popularity and developing vigorously in Hengdong（Hunan） and other areas in China.This paper not only discusses the characteristics of rural dishes and the role that standardization plays in their development,but expounds the major points and contents of drawing up criteria for rural dishes as well.The paper also points out that standardization of rural dishes is necessary for the sustainable development of Hengdong rural dishes.
