北方酱香大曲酒碎沙工艺生产实践与思考

Production Practice of Grain-smashing Technology of Maotai-flavor Daqu Liquor in Northern China

摘要 对大曲酱香碎沙生产工艺进行生产实践研究。结果表明,碎沙工艺解决了香味物质提取难的问题,提高了堆积质量,不影响出酒率,所产酒的酒质比较理想;生产成本分析表明,碎沙工艺吨酒成本可节约5753元,按年生产1000 t酒计,每年可增加效益575.3万元。 The production practice of grain-smashing technology of Maotai-flavor Daqu liquor was investigated. The results showed that the use of grain-smashing technology could settle the problem of difficult extraction of flavoring components and improve stacking fermentation quality without adverse effects on liquor yield. Production cost analysis indicated that the use of such technology could save 5,735 RMB per ton liquor (increasing 5.753 million RMB profits for 1,000t liquor yield). (Tran. by YUE Yang)
