摘要
设计了滚动式搅拌发酵车,应用于清香型白酒酿造,试图为清香型白酒生产的机械化提供可参考雏形。并从微生物监控、温度、水分和劳动力强度4个方面阐述了新型发酵车的优势。但同时,因为白酒的酿造更多的是传统工艺,存在许多不可控因素和未知因素,所以该发酵车还存在一定的缺陷,有待更多有志于此的同仁共同努力。
Rolling stirred fermentation machine had been designed successfully for the production of Fen-flavor liquor, which could provid reference model for mechanized production of Fen-flavor liquor. The advantages of the newly-developed fermentation machine were elaborated from four aspects including microbes monitoring, temperature, moisture content, and labor intensity. Meanwhile, traditional production techniques are still necessary and there are many uncontrolled and unknown factors in liquor production, so the newly-developed fermentation machine has certain defects for further exploration.
