进出口动物产品兽药残留对食品安全的影响越来越明显,日益成为阻碍国际间贸易的重要因素,这对食品兽药残留的快速检测提出了高要求。作者主要介绍酶联免疫分析技术的基本原理、分类和技术要点,并对其在动物产品兽药残留检测中的应用、问题和前景进行综述。

The negative effects of veterinary drug residues on food safety have become more and more obvious,so high re-quirements have been made for the rapid detection of veterinary drugs residues in food.This article introduces the basic principle of enzyme-linked immunosorbent assay（ELISA）,classification and the key technologies for the establishment of ELISA.Aspects involved the application,problem and prospect of ELISA in the detection of veterinary drug residues in foods were reviewed in the paper.
