摘要
我国食品工业总产值连续多年位于国民经济制造业之首,在现代社会中所起的作用越来越大,而食品科学的进步带动了食品工业的发展,并产生巨大影响。食品科学学科是一个综合性强,理论与实际应用结合紧密的交叉学科,是关系人类生存与发展的重要学科。它融合了生物学、化学、物理学、农学、医学、材料与工程学等学科的理论和方法,研究食品(及其原料)的性质及其影响因素、食品加工过程、贮运与保鲜及其生物学基础等。本文主要论述我国食品科学学科的历史、现状及今后的发展方向。
The total output value of food industry ranks first among manufacturing industries in China for many years, and plays an increasingly great role in the development of modem society. The advancement of Food Science also exhibited a great impact on the development of food industry. Food Science Discipline is an interdisciplinary, which has the characteristics of strong comprehensiveness and close relationship of theory and application. It is also an important discipline which is closely related to the human existence and development. This discipline studies food ＆ food stuff property, factors causing food deterioration, food processing, food storage and fresh keeping based on the theory and method from biology, chemistry, physics, agronomy, medicine, material and engineering. The paper reviewed the history, current development, and trends of Food Science Discipline in China.
