摘要
通过半干研磨法制备了多种水溶性粉末状壳聚糖盐,并研究了不同盐的成膜性能、抑菌能力和对鸡蛋的保鲜能力。红外光谱分析表明:壳聚糖与相应的酸在无溶剂存在的情况下实现了氨基的质子化反应而不仅仅是简单的物理吸附,产物具有良好的水溶性且性质稳定,该方法操作简单,无污染而且经济。成膜性能、抑菌效果和对鸡蛋保鲜效果的初步研究表明,壳聚糖乳酸盐和壳聚糖醋酸盐适合作为保鲜剂,使用简单、方便。
Several kinds of powder chitosan salts were prepared by half-dry grinding method. Film-forming properties, antibacterial capacity and egg fresh keeping capacity were investigated. Infrared spectroscopy shows that two reactants connection is not simply physical absorption, but protonation reaction of ehitosan occurred in solvent-free conditions. Therefore, the products were soluble in neutral water and the stability was increased during the storage. This preparation method is ease, sanitary and economic. Fabrication and performance test of membrane, antimicrobial test and preservation test showed that chitosan lactate and ehitosan acetate can be used as antistaling agent, which is simple, convenient and effective.
