摘要
综述了凝胶渗透色谱仪(GPC)、扫描电子显微镜(SEM)、差示扫描量热仪(DSC)和核磁共振仪(NMR)这4种重要分析仪器在淀粉的精细分子结构、晶体颗粒特征、热化学性质和乳化性能等研究中的应用,并展望了其在淀粉研究中的发展前景。
The applications of gel permeation chromatography（GPC）,scanning electron microscopy（SEM）,differential scanning calorimetry（DSC） and nuclear magnetic resonance instrument（NMR） are summarized in this paper.Researches on fine molecular structure,the nature of crystal particles,the thermal chemical properties and the emulsion properties of starch are depend on these instruments.While we also expect the development prospects of analytical instruments in starch research.
