摘要
以单季粳稻为材料,采用双因素双水平试验来研究低剂量0.6kGy60Coγ射线辐照单季粳稻对稻谷低温干燥失水特性及品质特征的影响。结果表明,0.6kGy剂量辐照能提高稻谷的失水速率,缩短干燥时间,对稻谷加工品质和营养品质影响不大,能一定程度弥补热风低温干燥对稻米品质带来的负面影响,改善稻米蒸煮食用品质。
Two factors and two levels test was carried out to study the dehydration and rice quality characteristic of single cropping jopanica during low-temperature hot air drying after irradiation by lowdose 60Co Gamma ray of 0.6kGy.The result showed that after the pre-treatment by dose Gamma ray of 0.6kGy,the dehydration date of rice was lightly increased during drying,and the drying time was clearly shorten.In addition,it had little influence on processing quality and nutritional quality of rice,however could make up for some degree of loss of rice quality heated-air drying and improved cooking and eating quality of rice.
