摘要 从食品营养与安全角度出发,介绍生物芯片的原理及分类,着重讨论此类技术在食源性微生物检测、有害物质分析及食品营养与疾病机理方面的研究,旨在为食品工业与高新检测技术的进一步结合提供理论帮助。 The application of biochip in food nutrition and safety,especially the detection of food borne pathegon,analysis of harmful substences and researches on food nutrition,together with the prospect of biochip technique in food industry,were discussed.
