建德市煎炸油使用情况及卫生质量调查

The investigation of use situation and health quality of deep fried oil in Jiande

摘要 目的:了解我市城乡市面上煎炸油的卫生状况及影响因素。方法:在建德市城乡随机抽查26家小摊点、21家快餐店、25家大排档、20家大型饭店煎炸油及28份备用煎炸油,对其煎炸油及煎炸备用油的使用情况及感官指标进行调查,测定其酸价、过氧化值、羰基价值。结果:煎炸油外观及色泽超标严重;大型饭店的煎炸油卫生质量较高,大排档与快餐店次之,小摊点最差;乡镇煎炸油及备用油的合格率明显低于市区。结论:目前煎炸油卫生现状不容乐观,应引起卫生监督部门的充分重视。 Objective:The hygienic status and influence factors of deep fried oil in the urban and rural markets were studied.Methods: The samples of deep fried oil and the reserve deep fried oil were selected randomly in Jiande city,which were supplied from 26 small stalls,21 nosherys,25 snack bars,20 large hotels and 28 reserve deep fried oil.The use situation and sensory guide line of deep fried oil and the reserve deep fried oil were investigated,including the acid value,peroxide value,and carbonyl value.Results: Appearance and colour of deep fried oil were beyond the limit deeply.The health quality of deep fried oil in large hotels was better,inferior quality in snack bars and nosherys,and low quality in small stalls.The eligible rates of deep fried oil and the reserve deep fried oil in the rural district were lower than in the urban district.Conclusion: Now the health situation of deep fried oil is not optimism,and great importance must be attached in the department of health inspection.
