摘要
比较了丁酸单双甘油酯与标品的色谱保留值和质谱图,确定了目标物。用喷雾干燥的方法,以麦芽糊精为壁材,变性淀粉为乳化增稠剂,制备大豆油粉末油脂。采用丁酸单双甘油酯、柠檬酸单甘酯和聚甘油酯为乳化剂,当其比例为3%:1.2%:0.6%时,表面油含量1.23%,包埋率97.93%。对其复原乳状液进行粒度测定,粒度分布范围较窄,表明乳状液均匀细腻,产品乳化稳定好。并对其做电镜扫描,微胶囊表面圆润光滑,形态均一,有一些小颗粒附着在大颗粒表面,形成部分附聚粉,增强了粉末油脂的溶解性,同时表明产品微胶囊化效率高,对包埋的芯材有良好的保护作用。
The chromatographic retentiontotal and mass spectrogram of butyric acid mono-and diglycerides and glyceride standard had been compared,the target products were identified.The powder soybean oil have been prepared using maltodextrin as wall material and modified starch as emulsion thickener by spay drying technique.Using butyric acid mono-and diglycerides、citrate Monoester、polyglycerol ester as emulsifier,when the proportion of them were 3%:1.2%:0.6%,surface oil 1.23%,encapsulation rate 97.93%.The particle size distribution of recovery emulsion liquid rage is narrow,it showed that the recovery emulsion liquid well-mixed,and the emulsion stability of products were good.The surface of microencapsulated oil powder were round and smooth,the shape were look the same through electron microscope scanning,and there were some small particles adhere to some big particles,then it formed some part of agglomeration powder,enhanced the solubility of microencapsulated oil powde and it signified that microencapsulation efficiency of products were high,it can protect the core material in a good condition.
