摘要
为给进一步研究藤茶香气和产业开发提供一定的理论依据,采用顶空固相微萃取-气相色谱质谱法(HS-SPME/GC-MS)定性半定量分析藤茶中特征香气成分,并对样品用量、萃取温度、萃取时间、平衡时间、解吸时间条件进行了优化。结果表明:顶空固相微萃取最佳条件为样品用量0.5 g、萃取温度50℃、萃取时间50 min、平衡时间10 min、解吸时间2.5 min;初步确定藤茶的特征香气成分是:壬醛、癸醛、顺-香叶基丙酮、6,10,14-三甲基-2-十五烷酮、邻苯二甲酸二乙酯、邻苯二甲酸二异丁酯、2,6-二(1,1-二甲基乙基)-4-甲基酚、2,4-二(1,1-二甲基乙基)-酚、β-紫罗兰酮、1,1,3-三甲基-3-苯基茚、(R)-5,6,7,7a-四氢-4,4,7a-三甲基-2(4 H)-苯并呋喃酮。HS-SPME/GC-MS是一种所需样品量少、可靠、简单、快速的方法,可运用于藤茶香气成分的定性半定量分析。
The specific aroma components of Ampelopsis grossedentata were qualitatively and semi-quantitatively analyzed by HS-SPME/GC-MS based on optimization of sample dosage,extraction temperature,extraction time,balanced time and desorption time to provide theoretical basis for further development of Ampelopsis grossedentata.The results showed that the optimum HS-SPME conditions were 0.5 g sample dosage,50℃,50 min extraction time,10 min balanced time,2.5 min absorption time,and the specific aroma components were nonanal,decanal,cic-geranylacetone,6,10,14-trimethyl-2-pentadecanone,diethyl phthalate,phthalic acid,diisobutyl ester,2,6-bis(1,1-dimethylethyl)-4-methyl-phenol,2,4-bis(1,1-dimethylethyl)-phenol,β-ionone,1,1,3-trimethyl-3-phenyl-indan and(R)-5,6,7,7a-tetrahydro-4,4,7a-trimethyl-2(4H)-benzofuranone.The HS-SPME/GC-MS with less sample dosage,reliability,simplicity and rapidity can be used in qualitative and semi-quantitative analysis of Ampelopsis grossedentata specific aroma components.
