摘要
[目的]辨别43份不同蜂蜜样品中果糖、葡萄糖和蔗糖含量。[方法]采用高效液相色谱对43份蜂蜜样品中果糖、葡萄糖和蔗糖含量进行测定。[结果]43份样品中果糖与葡萄糖总量在60.09%~77.79%,蔗糖含量在0~2.76%,符合国家标准GB18796-2005的要求,并且其中的果糖含量和葡萄糖含量的比值保持在0.84~1.57。[结论]该研究可为蜂蜜样品的鉴定提供科学依据。
[Objective]The research aimed to identify fructose,glucose and sucrose content in 43 honey samples. [Method]The fructose,glucose and sucrose content were determined in raw materials of honey by high performance liquid chromatogram. [Result]The results showed that the total content of fructose and glucose was in the range of 60.09%-77.79%,and the content of sucrose was in the range of 0-2.76%. Two indices met the context of national standards GB18796-2005,and the ratio of fructose and glucose remained in range of 0.84-1.57. [Conclusion]The study can provide scientific basis for identifying honey samples.
