摘要
采用正交试验筛选雪莲果果块烫漂护色的工艺条件。试验结果表明,雪莲果最佳烫漂护色条件为:温度80℃,时间3 min,柠檬酸质量分数0.25%。
The study is carried out through orthogonal experimental design for the processing technology about blanching color protection of yacon. The results indicate that optimum conditions of blanehing color protection are temperature at 80 ℃, 3 min and 0.25% citric acid.
