摘要
新疆是全球三大番茄加工主产区之一,番茄酱的产量约占世界番茄制品总量的25%。为了提高加工番茄的国际竞争力,为国际市场提供优质的番茄酱产品,必须从提高番茄酱的产品品质入手。从加工番茄的原料要求、加工工艺流程、品质控制措施及影响番茄酱品质的因素4个方面进行了综述。
Xinjiang is one of the three main producing regions of processing tomato, and the yield of processing tomato account for 25% in the world. To increse the international competition of processing tomato and provide the international market with high quality tomato paste, the quality of tomato paste product must be improved. Therefore, file raw material, technological process, quality control measures and quality effecting factors of tomato paste are discussed.
