摘要 测定了湖白鲑(Coregonus cluncaformis)的肌肉营养成分。结果显示:湖白鲑含肉率为60.82%,肌肉(鲜样)中粗蛋白质含量为16.85%,粗脂肪含量4.39%,水分含量77.06%,灰分含量1.13%,该鱼肌肉中含有17种氨基酸,总量为62.00%(质量分数,干样),其中7种为人体必需氨基酸(不包括色氨酸),总量为28.16%,占氨基酸总量的45.42%;其必需氨基酸的构成比例基本符合FAO/WHO的标准。湖白鲑的限制性氨基酸为(蛋氨酸+胱氨酸)、苏氨酸和(苯丙氨酸+酪氨酸),必需氨基酸指数为59.80,4种鲜味氨基酸总量为19.94%。 Nutritive composition of muscle in Coregonus cluncaformis was analyzed.The result showed that the contents of muscle,crude protein,crude fat,moisture and crude ash in the fresh muscles were 60.82%,16.85%,4.39%,77.06% and 1.13% respectively.The muscles contained 17 amino acids and the total amount was 62.00%(mass fraction,dry weight),of which 7 essential amino acids for human(excepting for tryptophan) accounted for 28.16%,holding 45.42% of total content of amino acid.It was apparent that the constituent ratio of the essential amino acids in general was accorded with the FAO/WHO standard.The restriction amino acids was(Met+Cys),Thr and(Phe+Tyr),and the essential amino acid index(EAAI) was 59.80.The content of 4 kinds of delicious amino acids was 19.94%.
