摘要
磷酸盐是目前使用最广泛的食品品质改良剂。本文主要介绍了磷酸盐品质改良剂在食品工业中的广泛应用及其对食品品质改良的作用机理,并对其发展前景进行了展望。
Phosphate is widely used as a quality booster of foods now. this paper introduce the extensive applications of phosphate and its mechanism of effects in food industry. its development is also concerned.
