本研究应用“离参照样偏差”描述分析对巧克力进行感官描谱,并展示如何对产品差异、描述词的选用和鉴评小组行为进行综合分析。
Deviation - from - Reference Descriptive Analysis was applied to sensory profiling of chocolates in this study. An integrated analysis of product difference, sensory descriptor selection and panel behavior was demonstrated.
