隐黄素使用稳定性的初步研究

A tentative study on the stability of cryptoflavin in use

研究了常用的几种食品添加剂对隐黄素稳定性的影响，探讨了隐黄素的耐热性、耐光性和耐氧化性、耐还原性。结果表明，隐黄素具有较强的耐氧化性和耐还原性，可与各种常见的食品添加剂共同使用，但其耐热、耐光性较差。

The influence of some common food additives on the stability of cryptoflavin ,and the resistance of cryptoflavin to heat ,light,oxidation and reduction were investigated.The results showed that cryptoflavin was stable with these additives and was highly resistant to oxidation and reduction,but not to heat or light .
