摘要
乳饼是云南路南地区的一种传统乳制品。本文对乳饼制品中乳杆菌进行调查,由19份样品中,共分离到48株乳杆菌,鉴定出15种(亚种),其中德氏乳杆菌、麦芽香乳杆菌、嗜酸乳杆菌和发酵乳杆菌等4个种占60.4%,确认是乳饼制品中的优势种群;同时对分离菌株进行的发酵性能试验,发现部分菌株有较好的产酸产香性能,可为乳杆菌进一步筛选利用奠定基础。
Dairy cake is a traditional dairy product of lunan district in Yunnan. In this paper, 48 strains lactobacillus spp. were isolated from 19 samples of the products. They have been identified as 15 differential species, including L.delbrueckii, L.mataromicus, L.acidophilus and L.fermentum as main microbiota and species of lactobacillus at a rate of 60.4%,Ferment characteristics of these strain were tested also, some of them have good characteristic of producing lactic acid and fragrance.
