摘要
该文结合近几年来的新进展,从酶促褐变的底物和多酚氧化酶出发,论述了组织培养外植体的影响因子,生产过程中克服褐变的方法,目前在组织培养外植体褐变方面的研究进展以及褐变机理的假说.结果表明,酚类物质的含量、多酚氧化酶的类型和活性、生物膜的透性以及外植体的种类、基因型都是决定材料是否发生褐变的重要因素.
Focused on the recent development of explant browning researches and based on Polyphenol Oxidases and Polyphenol, the influences of explant browning, the methods to overcome browning in tissue culture, and the mechanism of explant browning are reviewed and analyzed. It shows that, the contents of Polyphenol, type and activities of Polyphenol Oxidase, permeability of biomembrane, genotype of explant are all determination factors for the browning of material.
