摘要
研究选用壳聚糖、海藻酸钠、双乙酸纳、L-抗坏血酸钠制成4种不同配比的生物涂膜保鲜剂,分别对大米进行涂膜保鲜处理,通过分别研究不同配比的生物涂膜剂对大米感官指标、品质指标、微生物指标的影响,确定出生物涂膜配方及工艺。
Research used chitosan,sodium alginate,sodium diacetate,acid sodium L-ascorbate as the material to develop four different biological coating film reagent.Deal rice with biological coating film reagent,make sure the technology of biological coating film by developing the influence of different ratio on sense organ evaluating,quality index and microbiological index.
