该文介绍国内外机械去骨肉糜在食品中的应用和其在应用中出现的问题及解决对策,如脂肪氧化、血红素氧化和乳化等,并探讨其开发利用前景。
The utilization and research development of mechanically deboned meat emulsion are discussed in the paper, such as lipid oxidation, and heme-oxidation, emulsification, and the newest developing foreground of mechanically deboned chicken meat is discussed.
