摘要
将常见的5种蔬菜于相同冷藏条件下储存11天,每2天测定1次亚硝酸盐含量,观察其变化规律。结果发现,虽然不同蔬菜在相同冷藏条件下产生的亚硝酸盐含量不同,但都遵循冷藏时间越长亚硝酸盐的含量就越高这个规律。
The variation of nitrite content in 5 familiar vegetables under cold storage within days were investigated by measuring nitrite content every two days. The results show that, al- ough different vegetables' nitrite content are different under same refrigeration requirement, it llows the law that the longer the cold storage time is, the higher the nitrite content is.
