网印用可食性油墨的研制及其性能研究 被引量:6

摘要 在对网印用可食性油墨的配制原理进行分析的基础上,对其进行了原料筛选、配方制备和产品的黏度等流变性能测试,以及印刷适性测评,最后得到了优选的可食性油墨配方。其中颜料确定为食品级添加色素,连结料确定为麦芽糖(浆)、淀粉、食品级PVP、阿拉伯胶、水和乙醇,并辅以适当的添加助剂,以提升可食性油墨的印刷适性。研究表明,所制得的网印用可食性油墨具有良好的感观效果、食用安全和卫生性、流变性、丝网印刷适性等性能。 Based on analysis of the compounding principle of edible ink for screen printing,the authors performed screening of raw materials,formula preparation and testing of rheological properties including viscosity,as well as performed evaluation of printability,and finally obtained optimized formula for edible ink.Its pigment was ascertained to be food grade addition pigment,and the vehicle was ascertained to be maltose(syrup),starch,food grade PVP,Arabic gum,water and ethanol,which were aided by appropriate additive compounds,so as to improve the printability of the edible ink.The results show that the prepared edible ink for screen printing has good sensory effect,food safety and sanitation as well as rheological properties and printability for screen printing,etc.
