姬松茸^(60)Co辐射新菌株J_5的营养成份、重金属含量与农药残留分析及其安全性评价 被引量:8

摘要 对姬松茸60Co辐射新菌株J5子实体中营养成份、农药残留和重金属含量进行测定,并进行安全性评价,结果表明:其子实体中鲜味氨基酸总量(5.51 g/100 g)、甜味氨基酸总量(5.7 g/100 g)、硫氨氨基酸总量(1.81 g/100 g)、支链氨基酸总量(3.97 g/100 g)、芳香族氨基酸总量(1.68 g/100 g)、儿童氨基酸总量(1.8 g/100 g)、必需氨基酸总量(10.16 g/100 g),分别占氨基酸总量(23.17 g/100 g)的23.78%、24.60%、7.81%、17.13%、7.25%、7.77%、43.85%,也分别比姬松茸J1高24.94%、22.84%、14.56%、19.22%、17.48%、17.65%和19.53%。多不饱和脂肪酸(76.35%)和不饱和脂肪酸(74.65%)比姬松茸原菌株J1分别高2.21%和2.61%。1 kg子实体含镉5.61 mg、铅0.39 mg、汞0.5 mg和砷0.03 mg,也分别比原菌株姬松茸J1降低21.32%、19.35%、58.51%和72.73%;铅和砷的含量符合国家绿色食品食用菌NY/T749-2003的标准。子实体中农药残留的溴氰菊酯、百菌清、六六六、多菌灵、滴滴涕和二氧化硫的含量符合国家绿色食品食用菌NY/T749-2003的标准。联苯菊酯、阿维菌素、甲基托布津、甲胺磷和毒死蜱的含量符合欧盟2003年出口规定的标准。 It showed that the total amount of flavor amino acid(5.51 g/100g),sweetness amino acid(5.7 g/100g),methionine(1.81 g/100g),branched chain amino acid(3.97 g/100g),aromatic amino acid(1.68 g/100g),children amino acid(1.8 g/100g),necessary amino acid(10.16 g/100g) in the fruit bodies of Agaricus blazei J5 radiated by 60Co was accounted for 23.78%,24.60%,7.81%,17.13%,7.2% 5,7.77% and 43.85% of the total amount of amino acids(23.17 g/100g) respectively.The value was 24.94%,22.84%,14.56%,19.22%,17.48%,17.65% and 19.53% respectively higher than the original strain of Agaricus blazei J1.Polyunsaturated fatty acids(76.35%) and unsaturated fatty acid(74.65%) in Agaricus blazei J5 was 2.21% and 2.61% higher than Agaricus blazei J1 respectively.In 1 kg fruit bodies of Agaricus blazei J5,the content of cadmium,lead,mercury and arsenic was 5.61 mg,0.39 mg,0.5 mg and 0.03 mg respectively.To compare with the o riginal strain of Agaricus blazei J1,the content of cadmium,lead,mercury and arsenic decreased by 21.32%,19.35%,58.51% and 72.73% respectively.The content of lead and arsenic accorded with National Green Food Standard for Edible Fungus NY/T749-2003.The residual amounts of pesticides in the fruit bodies of Agaricus blazei J5,such as Decamethrim,Chlorothalonil,Hexachlorocyclohexane,Carbendazim,DDT and SO2 accorded with National Green Food Standard for Edible Fungus NY/T749-2003.The residual amounts of Bifenthrin,Avermectins,Thiophanate-Methyl,Methamidophos and Chlorpyrifos accorded with European Union Exporting Standard issued in 2003
