大菱鲆腐败菌生长动力学研究和货架期预测 被引量:15

Microbial growth kinetics model of spoilage organisms and shelf life prediction for Scophthalmus maximus

摘要 采集0、3、7、10℃贮藏大菱鲆中希瓦氏菌生长数据,建立了大菱鲆0~10℃贮藏中特定腐败菌生长动力学模型和剩余货架期预测模型。感官、化学和微生物生长动态分析表明,希瓦氏菌为大菱鲆0~10℃贮藏中的特定腐败菌。Gompertz方程能较好地描述希瓦氏菌的生长。采用Belehradek方程描述的温度对希瓦氏菌最大比生长速率和延滞时间的影响均呈较好线性关系。以5℃贮藏大菱鲆中希瓦氏菌生长数据,对所建立的生长动力学模型和剩余货架期预测模型的准确性进行验证,得到最大比生长速率、延滞时间、货架期的预测值相比实测值的相对误差分别为-14.36%、5.61%和6.74%,表明建立的模型可以快速准确的预测大菱鲆0~10℃贮藏过程中的鲜度变化和剩余货架期。 The growth data of Shewanella stored aerobically at 0,3,7,10 ℃had been collected in order to develop the growth kinetics model of specific spoilage organisms and remaining shelf life prediction model for Scophthalmus maximus stored aerobically in temperature 0-10 ℃.Results from sensory,chemical quality and microbiological behavior analysis identified Shewanella as a special spoilage organism of Scophthalmus maximus stored at 0-10 ℃.The growth of Shewanella can be well described by the Gompertz type model.The influence of temperature on growth kinetics parameters-maximum specific growth rate and lag phase modeled by Belehradek model showed good linear relationship.The accuracy validation of growth kinetic models built and remaining shelf life prediction model was compared with experimental development of Shewanella grown on Scophthalmus maximus at 5 ℃.Relative errors between predicted and observed μmax,λ and SL were-14.36%,5.61% and 6.74% respectively at 5 ℃,indicating that microbial growth models built were valuable for rapid and realistic prediction of the freshness quality and remaining shelf life of Scophthalmus maximus under aerobic storage from 0 ℃ to 10 ℃.
