摘要 建立生鲜牛乳中真蛋白快速检测方法,运用于牛乳中蛋白质掺假检测。采用紫外分光光度计,在280 nm波长处,通过吸光度值来测定真蛋白质量浓度;采用FT-120、甲醛滴定法、凯氏定氮法进行对比验证;考察人为添加非蛋白类含氮物质氯化铵、硫酸胺、尿素对真蛋白含量检测结果的影响。结果表明,紫外分光光度法检测真蛋白质量浓度与其他3种检测方法差异不显著;且检测结果不受人为添加非蛋白类含氮物质的影响。紫外分光光度法检测生鲜牛乳真蛋白质量浓度,方法快速、可行,适用于生鲜牛乳中蛋白质掺假检测。 To establish a quick true protein testing method for milk protein adulteration inspection,and can be applied milk protein inspection adulteration.At 280 nm wavelength,protein content were measured by spectrophotometer.The method was compared with FT-120, formaldehyde titration and Kjeldahl methods.The addition of non-protein nitrogen material such as ammonium sulfate,ammonium chloride and carbamide was found no influence on the result.Spectrophotometory method has no significant difference with other 3 methods when it was used as a quick true milk protein testing method.The result was not interfered by addition of non-protein nitrogen material.The UV spectrophotometry determination of true protein were fast,feasible.UV spectrophotometry can be applied to raw milk in the quick testing and inspection adulteration.
