对一种古老而新型的酒精性发酵乳饮料—开菲尔(Kefir)作了一般性介绍。国际上对Kefir引起极大兴趣,并进行了深入的科学研究,取得了很大成果,本文对此作了综述。关于Kefir的语源和定义,Kefir的规格标准,Kefir粒。
A kind of ancient but new-style milk beverage-Kefir was introduced. A general Survey of the etymology of the Kefir and its definition, specification and standard were described. About the Kefir grain, its nutritious composition and physiological functions in human health were reviewed. The manufacture of Kefir and its progress was introduced.
