摘要
研究了果汁的流型与组成的关系及其流动活化能与频率因子的关系。发现果汁的流型与组成有关,不含果胶的果汁流型为牛顿流体,含果胶的果汁流型为假塑性流体;果汁的流动活化能与频率因子间存在着补偿关系。
The relationship between the rheological type of fruit juices and their composition is researched.It is discovered that the rheological type of fruit juices is related to their composition.The fruit juices free of pectin behave as Newton liquids.The fruit juices containing pectin behave as pseudoplastic fluid.The relationship between the flowing activation and frequency factor of the fruit juices is also researched.It is discovered that there are compensation relations for flowing activation energy and frequency factor of the fruit juices.
