摘要 采用超声波法提取薯莨色素,得出最佳提取工艺:用60%的乙醇在超声波功率为120 W、温度为60℃、料液比为1∶30下处理薯莨粉末50 min。所得的薯莨色素在酸性和弱碱性条件下性质稳定,在70℃以下较为稳定,Fe2+和Zn2+对其稳定性影响不大,Ti4+对其影响明显。 It extracted the Dioscorea Cirrhosa pigment by ultrasonic method,obtained the optimum extraction process: on condition that the ultrasonic power was 120 W,the temperature was 60 ℃,the ratio of solid to liquid was 1∶30,it treated the Dioscorea Cirrhosa powder in 50 min by using the 60% ethanol solvent.The pigment extracted from Diosorea Cirrhosa was stable under the condition of 70℃,acidity and little alkaline,it could maintain stability with the existence of Fe2+ and Zn2+,but was impacted greatly by Ti4+.
