摘要 纤维素酶是一类能够水解纤维素的β-1,4-葡萄糖苷键生成葡萄糖的多组分酶的总称,传统上将其分为3类:内切葡聚糖酶、外切葡聚糖酶和β-葡萄糖苷酶。纤维素酶是一种复合酶,准确测定纤维素酶活力的大小,对于研究纤维素酶的特性及应用具有重要意义。该文对纤维素酶测定的常用方法进行了综述和评价。指出单一的酶活力测定方法不能确切的反映该酶的作用机制和活力,只有诸活力的综合测定方能全面的反映酶制剂对纤维素的作用。 Cellulase is a general reference of enzymes that hydrolyzes β-1,4-glycosidic linkages in cellulase into glucose.Traditionally,it has been divided into three categories:endo-glucanase,exo-glucanase or cellobiohydrolase,and β-glucosidase.Cellulase is a complex enzyme composed of several components.It is important to accurately detect the activity of cellulase for study this enzyme.In this paper,the common method of determination of cellulose were reviewed and evaluated.The single method to determine enzyme activity cannot accurately reflect the function mechanism and activity of this enzyme.Only a comprehensive determination of all activity can fully reflec the role of enzymes on cellulose.
