摘要 目前,葡萄酒掺杂、掺假问题严重,因检测技术的限制,给葡萄酒监管部门带来监管压力。尤其是葡萄酒中年份酒、原产地酒的质量鉴别,仍缺乏有效检测方法。该文综述同位素比质谱仪法(IRMS)和点特异性天然同位素分馏核磁共振技术(SNIF-NMR)2种化学方法的原理及其在葡萄酒质量鉴别中的应用,以为推动我国葡萄酒质量检测技术的进步提供参考。 At present,problems of intermingling and adulteration in grape wine have been serious,hut the restriction of technology has brought regulatory pressure on supervisory board of grape wine ,especially for uintage wine and origin identification wine ,their qualities identification have been lack of effective methods. The paper summarized principles and the applications in grape wine quality identification of Isotope Raft Mass Spectrometry (IRMS)and Site-specific Natural Isotope Fractionation-Nuclear Magnetic resonance ( SNIF-NMR ), in order to provide references for propelling the progress of quality identification technology of grape wine.
