Nutritional analysis of Sipunculus nudus in Beihai

摘要 目的 通过对广西北海产方格星虫的营养成分、氨基酸、脂肪酸和微量元素含量的初步测定,评价其营养成分,为进一步的研究提供参考.方法 以广西北海产方格星虫为原材料,采用化学分析、氨基酸和脂肪酸组成分析、微量元素分析等方法测定其营养成分.结果 样品(30目干燥粉末)的蛋白质含量为79.90%,脂肪3.08%,总糖5.67%,含有17种氨基酸,20种脂肪酸和多种微量元素.结论 北海产方格星虫富含蛋白质、多种氨基酸和微量元素,是值得进一步开发利用的海洋生物. Objective To analyse fundamental ingredients,contents of amino acids,fatty acids and trace elements in Sipunculus nudus from Beihai and to provide references for further research in this respect. Methods Nutritional contents of Sipunculus nudus from Beihai were measured with chemical analysis,analyses of amino acids and fatty acids comxsitions,and analyses of trace elements. Results Measurements of the dry - powdered sample showed that contents of crude protein,fat and carbohydrate in the sample accounted for 79.90% ,3.08% and 5.67%respectively. Seventeen kinds of amino acids,20 kinds of fatty acids and many kinds of trace elements could also be detected. Condusions Sipunculus nudus from Beihai is a marine organism with plenty of protein,amino acids and trace elements and is worth further research and development.
