摘要
用粘度速测仪(RVA)测定了72个水稻品种的淀粉粘滞性谱(RVA谱),发现不同亚种之间RVA谱的特征存在明显差异.表观直链淀粉含量(Apparent Amylose Content AAC)相似的水稻品种,崩解值大小依次为爪哇稻>粳稻>籼稻,而消减值呈相反趋势.在43个籼稻品种中,AAC与RVA谱的热浆粘度、冷胶粘度、消减值和回复值均呈极显著正相关,相关系数分别为0.48、0.69、0.72和0.66,与崩解值呈极显著负相关,相关系数为-0.65.在13个粳稻品种中,AAC只与消减值呈显著正相关,相关系数为0.75,与崩解值呈显著负相关,相关系数为-0.63.在16个爪哇稻品种中,AAC与冷胶粘度、消减值和回复值呈显著或极显著正相关,相关系数分别为0.72、0.85和0.69,与崩解值和最高粘度呈极显著负相关,相关系数分别为-0.77和-0.72.
Using Rapid Visco-Analyzer(RVA), the starch viscosity profiles(RVA profile) of 72 cultivars or lines within 3 rice subspecies were analyzed. Significant difference of RVA profiles was found among rice subspecies. The breakdown of rice varieties with similar AAC continually decreased from javanica to japonica to indica subspecies, while their setback appeared in opposite direction. In indica rice, AAC was positively correlated with hot paste, cool paste, setback and consistence of RVA profile, with correlation coefficients of 0. 48** , 0. 69** , 0. 72**, and 0. 66** , respectively. In japonica rice, AAC was only positively correlated with setback, and negatively with breakdown, with significant coefficients of 0. 75** and -0. 65**, respectively. In javanica rice, AAC was poskively correlated with cool paste, setback and consistence, with significant coefficients of 0. 72* * , 0. 85* * and 0. 69* , respectively, while negatively to breakdown and peak paste, with significant coefficients of -0. 77* * and -0. 72* * respectively.
