摘要
本研究小组以阿坝州理县高半山生态兔肉为原料,经初加工、浸泡、调味、腌制、晾干、刀工、装袋和杀菌工序加工制作而成的怪味高半山生态兔,是在传统腌腊的基础上结合现代食品加工技术研制而成,成品具有色泽美观、滋味鲜美、怪味浓郁、肉质紧密、营养丰富、方便食用的特点。
The research team takes as its main ingredient the organic rabbit from the Mountain Gaoban in Lixian County of Aba Prefecture to prepare the multi-flavored rabbit which features pleasant color, savory taste, springy texture, rich nutritional elements and easy preparation on the part of the consumers. The processing technology, combing traditional pickling and modem food processing, includes preliminary processing, soaking, seasoning, marinating, draining, cutting, bagging and sterilizing.
