己糖激酶法测定葡萄酒中葡萄糖的含量 被引量:4

摘要 建立己糖激酶法快速检测葡萄酒中葡萄糖含量的分析方法。采用全自动工业生化分析仪,葡萄糖试剂盒(己糖激酶法)测定了葡萄酒中的葡萄糖,葡萄糖含量0~1.00 g/L浓度范围内线性关系良好,相关系数为1.00;加标平均回收率(n=3)在92.5%~98.0%之间;精密度和重复性(n=8)的RSD%分别为0.76%和1.60%,与国标酶-电极法测定结果对比,两种方法无显著差异。该法具有无需样品前处理、特异性好、灵敏度高、测定速度快等优点,适用于酿酒企业对葡萄酒产品和酿造过程的质量控制。 A method was developed for rapid measurement of glucose content in grape wine by the Arena automated discrete technology with glucose kit(Hexokinase).Within glucose content range(0.00~1.00 g/L),a suitable linear relationship was obtained and the correlation coefficient was 1.00,the average recoveries(n=3) were in the range of 92.5 %~98.0 %,and RSD % of precision and repeatability(n=8) were 0.76 % and 1.60 % respectively.Glucose content in grape wine samples evaluated by this method were compared with those evaluated by biosensor,and the results showed a good correlation between them.This method had the advantages including simple operation,good specificity,high sensitivity,and rapid determination etc.,and it was suitable for wineries to control or monitor the quality of product grape wine.
