几种泡菜中的乳酸两种手性对映体和亚硝酸盐的测定 被引量:7

摘要 采用高效液相色谱和分光光度计对超市中能够买到的包装和散装泡菜中L-乳酸、D-乳酸和亚硝酸盐含量的测定。结果表明,所测定的泡菜中L-乳酸的含量在80%以上,乳酸总量在1.5 g/L~55.0 g/L之间,根据不同泡菜品种而不同;其中亚硝酸盐的含量都很少,为0.01 mg/L~0.22 mg/L之间,远远低于我国的GB 2714-2003中规定的限量标准。 A method for determination of L-and D-lactic acid and nitrite in packed and bulk pickles by high-performance liquid chromatography(HPLC)and spectrophotometer were investigated.The results showed thatthe concentration of L-lactic acid is more than 80 %,the total lactic acid is different between 1.5 g/L-55.0 g/L.The content of nitrite is very little which is low more than the limit level of GB 2714-2003.
