摘要 芡实主产于江苏、山东、湖南、湖北、安徽等省区,其中含有丰富的碳水化合物、蛋白质以及多种维生素等,不仅营养价值高,而且具有养血安神、益肾固精、去湿健脾、止泻止带等功效,既可食用,又可药用。目前,芡实以原料销售为主,产品单一,附加值低,需对其进行深入研究,了解其保健机理,提高保鲜、加工技术水平,开发深加工产品。 Euryale ferox,mainly planted in Jiangsu,Shandong,Hunan,Hubei,Anhui and other provinces, which is rich in carbohydrates,protein and vitamins,etc.It not only has nutritive value,but also plays the therapeutic function in nourishing kidney,spleen,and preventing diarrhea.It is used either in traditional Chinese medicine for medication or as foodstuff.At present,Euryale ferox is simply sold as a crude material with low additional value.Therefore,it is necessary to make an in-depth study on its health-care function,preservation and process skills,and further development of its processing products.
