摘要
食品分析实验是食品科学与工程专业学生的专业基础课。文章探讨优化传统实验方法,改进实验操作方案,更好地培养学生的观察、思考、动手能力。加强实验室建设和规范化管理,对食品分析实验课程及其教学内容进行改革,并改革了考核和评价方法,改变以往单一的考核方向,对学生的理论知识、实践技能进行全方位的考核。通过改革提高了教学质量和效果。
Food analysis experiment was the basic course of students specializing in Food Science and Engineering. The paper investigated traditional test methods and measures of improving operation strategy, aiming to cultivate students' observation, thinking and hands-on abilities. Laboratory construction and standardized management had been reinforced. And the food analysis curriculum and assessment methods had been reformed.Changing the previous single orientation, the reforms generally examine student' theoretical knowledge and experimental technique. By means of the reform, the quality of teaching had been improved.
